Description

Ingredients

1 pound ground beef

8 ounces rotini or penne pasta

1 cup canned corn (drained)

1 can (10 oz) Rotel diced tomatoes with green chilies

1 packet taco seasoning

4 ounces cream cheese

2 cups shredded Mexican blend cheese

2 tablespoons chopped green onions or cilantro (optional garnish)


Instructions

1. Cook ground beef in a large skillet over medium heat until browned; drain excess fat.

2. Stir in taco seasoning with a splash of water; simmer for 2 minutes.

3. Boil pasta in a separate pot until al dente; drain.

4. Add cream cheese to the beef mixture and stir until melted and creamy.

5. Mix in Rotel tomatoes and corn.

6. Fold in cooked pasta until fully combined.

7. Transfer everything to a baking dish and top with shredded cheese.

8. Bake at 375°F (190°C) for 15–20 minutes until cheese is bubbly and golden.

9. Garnish with chopped green onions or cilantro if desired.

10. Serve hot and enjoy!

Notes

For extra spice, stir in a diced jalapeño or use hot Rotel.

Swap the pasta for cooked rice if you prefer a rice casserole twist.
