Ingredients

1 tablespoon oil

½ cup chopped onion

1 pound ground beef (80/20 blend)

2 tablespoons taco seasoning

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 hoagie rolls

1 cup fresh pico de gallo

½ cup chopped fresh cilantro

¼ cup pickled jalapeños (optional)

Instructions

1. Heat oil in a large skillet over medium heat. Add chopped onion and sauté until soft and golden.

2. Add ground beef to the skillet. Break it apart with a spatula and cook until browned.

3. Sprinkle in taco seasoning and mix until the beef is evenly coated.

4. Lower heat and stir in shredded cheddar and Monterey Jack cheeses. Let them melt into the beef.

5. While the beef cooks, toast hoagie rolls until golden and crisp.

6. Fill each roll with the cheesy beef mixture.

7. Top with fresh pico de gallo, chopped cilantro, and pickled jalapeños if using.

8. Serve immediately while hot and melty.

Notes

Toasting the rolls prevents sogginess and adds a satisfying crunch.

Add avocado slices or a drizzle of chipotle crema for a next-level twist.
