1/2 cup brown sugar

1 tbsp lemon juice

1 tsp cornstarch

Cake Batter:

1 cup unsalted butter (softened)

1 cup granulated sugar

1/2 cup brown sugar

3 large eggs

1 tbsp vanilla extract

2 1/2 cups all-purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup sour cream

Crumb Topping:

1 cup all-purpose flour

2/3 cup brown sugar

1 tsp cinnamon

1/2 cup cold butter, cubed


Instructions

  1. Prepare the Apple Filling: In a saucepan, combine diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat for 5–7 minutes until thickened. Set aside.
  2. Make the Crumb Topping: Mix flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly. Chill.
  3. Preheat Oven: Heat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  4. Prepare Batter: Cream butter and sugars. Beat in eggs one at a time, then vanilla. In a separate bowl, mix dry ingredients. Alternate adding flour mix and sour cream to the wet batter. Mix until just combined.
