Ingredients
2 pounds chuck roast, cubed
2 tablespoons olive oil
1 cup sofrito
1 cup tomato sauce
2 cups beef broth (or water + bouillon)
3 large potatoes, peeled and cubed
2 large carrots, sliced
2 bay leaves
1 teaspoon ground cumin
1 teaspoon dried oregano
1/3 cup green olives (optional)
Salt to taste
Black pepper to taste
Instructions
1. Heat olive oil in a heavy-bottom pot or Dutch oven.
2. Season beef with salt and pepper, then brown in batches. Remove and set aside.
3. In the same pot, sauté sofrito until fragrant. Add tomato sauce and stir.
4. Return the beef to the pot. Pour in beef broth, add bay leaves, cumin, and oregano.
5. Cover and simmer on low heat for 1 hour until the beef starts to tenderize.
6. Add potatoes and carrots. Simmer uncovered for 30–45 minutes, or until vegetables are soft and stew thickens.
7. Stir in olives (if using) and adjust seasoning to taste.
8. Serve hot over white rice or with crusty bread.
Notes
For even deeper flavor, marinate beef in sofrito and seasonings overnight.
