Ingredients

2 pounds beef chuck, cut into bite-sized cubes

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

2 tablespoons sweet paprika (Hungarian if possible)

1 teaspoon smoked paprika

2 tablespoons tomato paste

4 cups beef broth

1 1/2 cups diced carrots

1 1/2 cups diced potatoes

1 cup celery, sliced

1 tablespoon Worcestershire sauce

1 teaspoon caraway seeds (optional)

1 teaspoon dried thyme

Salt and black pepper to taste

1 bay leaf

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown beef cubes in batches, then set aside.
  2. In the same pot, sauté onions until translucent. Add garlic and cook for 30 seconds.
  3. Stir in both paprikas and caraway seeds. Mix in tomato paste and cook for 2 minutes.
  4. Return beef to the pot. Add beef broth, Worcestershire sauce, thyme, bay leaf, salt, and pepper. Stir well.
  5. Bring to a boil, reduce heat, and simmer covered for 45 minutes.
  6. Add carrots, potatoes, and celery. Simmer uncovered for another 45 minutes until beef is tender.
  7. Remove bay leaf, taste and adjust seasoning, and garnish with parsley before serving.
