Ingredients

2 cups cooked rice

2 large eggs

1/2 cup diced chicken breast or thigh

1/4 cup diced onion

2 tablespoons ketchup

1 tablespoon butter or oil

1 tablespoon milk or cream (optional)

1/4 teaspoon salt

1/8 teaspoon black pepper

1 tablespoon chopped green onions (for garnish)


Instructions

1. Heat butter or oil in a skillet over medium heat. Add diced onions and chicken. Cook until the onions are soft and the chicken is cooked through.

2. Add the cooked rice and break it apart with your spatula. Stir well.

3. Add ketchup and stir until the rice is evenly coated. Season with salt and pepper. Set aside.

4. In a bowl, whisk the eggs with milk or cream if using.

5. Heat a nonstick skillet over medium-low heat with a small knob of butter. Pour in the eggs and swirl to coat the pan.

6. Cook gently until just set but still soft in the center.

7. Spoon the fried rice into the center of the omelet. Fold the sides over and shape into an oval. Slide onto a plate seam-side down.

8. Garnish with extra ketchup and chopped green onions. Serve immediately.

Notes

Use day-old rice for the best fried rice texture and avoid clumping.
