Ingredients
3 ripe bananas, mashed
1/2 cup (120 ml) vegetable oil or melted butter
2/3 cup (130 g) granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups (190 g) all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup (175 g) semi-sweet chocolate chips, plus extra for topping
Instructions
- Preheat oven to 350°F (175°C). Line or grease a muffin tin.
- In a large bowl, mash bananas.
- Add oil (or butter), sugar, eggs, and vanilla. Stir until combined.
- Sprinkle in flour, baking soda, and salt. Stir just until mixed.
- Fold in chocolate chips.
- Divide batter into muffin cups, filling 3/4 full. Top with extra chips.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack.
