Ingredients

3 ripe bananas, mashed

1/2 cup (120 ml) vegetable oil or melted butter

2/3 cup (130 g) granulated sugar

2 large eggs

1 tsp vanilla extract

1 1/2 cups (190 g) all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 cup (175 g) semi-sweet chocolate chips, plus extra for topping


Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. In a large bowl, mash bananas.
  3. Add oil (or butter), sugar, eggs, and vanilla. Stir until combined.
  4. Sprinkle in flour, baking soda, and salt. Stir just until mixed.
  5. Fold in chocolate chips.
  6. Divide batter into muffin cups, filling 3/4 full. Top with extra chips.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes in the pan, then transfer to a wire rack.
