Ingredients
1 lb chicken breast
1 cup pineapple chunks
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
0.5 tsp salt
0.25 tsp black pepper
8 corn or flour tortillas
0.25 cup fresh cilantro, chopped
1 lime, cut into wedges
0.25 cup sour cream or crema (optional)
Instructions
1. Slice the chicken breast into thin strips and marinate with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
2. Heat a large skillet over medium-high heat. Add chicken and cook for 5–7 minutes until golden and fully cooked. Remove and set aside.
3. In the same skillet, add pineapple chunks and cook for 3–4 minutes until caramelized.
4. Warm tortillas in a dry pan for 30 seconds per side.
5. Assemble tacos with chicken, pineapple, cilantro, sour cream (if using), and a squeeze of lime.
Notes
Use fresh pineapple for maximum flavor and better caramelization.
Make it spicier by adding chili flakes or diced jalapeños to the marinade.
