Ingredients

6 uncooked sausages

1.5 pounds baby potatoes, halved

2 bell peppers, sliced (red and orange)

1 large onion, sliced

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh thyme or rosemary

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions

1. Preheat the oven to 425°F (220°C).

2. Slice the peppers and onion into strips. Halve or quarter the potatoes.

3. Place all vegetables and garlic on a rimmed baking sheet. Toss with olive oil, salt, pepper, and herbs.
