It’s one of those easy recipes that checks all the boxes for weeknight dinner ideas, romantic date nights, or even quick comfort food cravings.

Ingredients

1 lb large shrimp, peeled and deveined

12 oz fettuccine pasta

3 tablespoons unsalted butter

4 cloves garlic, minced

2 cups heavy cream

1 1/2 cups freshly grated parmesan cheese

2 1/2 cups chicken broth (or water + bouillon)

1 tablespoon olive oil

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil and 1 tbsp butter in a large pan over medium heat.
  2. Add shrimp, season with salt and pepper, and cook for about 2 minutes per side until pink and opaque. Remove and set aside.
  3. In the same pan, melt the remaining butter and sauté garlic for 30 seconds until fragrant.
  4. Pour in chicken broth and heavy cream. Stir to combine and bring to a simmer.
  5. Add uncooked fettuccine noodles, stirring occasionally. Simmer uncovered for 10–12 minutes until pasta is al dente.
  6. Reduce heat to low, stir in parmesan cheese until melted.
  7. Return shrimp to the pan and mix everything gently until heated through.
  8. Taste and adjust seasoning. Garnish with parsley and serve hot.
