1 tablespoon olive oil

2 cloves garlic, minced

1 pound ground beef (80/20)

2 tablespoons taco seasoning

2 cups beef broth

1 (15-ounce) can tomato sauce

1 (14.5-ounce) can diced tomatoes

8 ounces rotini pasta, dry

1 ½ cups shredded cheddar cheese

2 tablespoons chopped fresh cilantro or parsley (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add chopped onions and garlic; sauté until translucent.

2. Add ground beef and cook until browned. Drain excess grease if needed.

3. Stir in taco seasoning and cook for 30 seconds.

4. Add tomato sauce, diced tomatoes, beef broth, and pasta. Stir to combine.

5. Bring to a boil, then reduce heat and cover. Simmer for 12-15 minutes until pasta is tender.

6. Stir in shredded cheddar cheese until melted.
