Ingredients

12 oz linguine pasta

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons butter

4 cloves garlic, minced

2 cups chicken broth

1½ cups heavy cream

1½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons chopped parsley

¼ teaspoon red pepper flakes (optional)


Instructions

1. Season both sides of the chicken with Cajun seasoning.

2. Heat olive oil and 1 tablespoon butter in a large pot over medium-high heat. Sear chicken until golden and fully cooked, 4–5 minutes per side. Remove and set aside.

3. Add remaining butter and garlic to the pot; sauté for 30 seconds.

4. Pour in chicken broth and heavy cream. Stir to combine.

5. Add uncooked linguine. Bring to a boil, then reduce to a simmer and cook 10–12 minutes, stirring often.

6. When pasta is tender, stir in mozzarella and Parmesan until smooth and melted.

7. Slice the cooked chicken and return to the pot or place on top for presentation.

8. Garnish with parsley and red pepper flakes. Serve immediately.

Notes

Use freshly grated cheese for the smoothest melt in your sauce.

For a smoky kick, sub Cajun seasoning with blackened seasoning or add smoked paprika.
