Ingredients
1.25 lbs steak (sirloin or ribeye), cubed
10 oz rotini pasta, uncooked
2 tablespoons olive oil
4 tablespoons butter
6 cloves garlic, minced
1 teaspoon red pepper flakes
1 teaspoon paprika
2 cups heavy cream
1.25 cups grated parmesan cheese
2.5 cups beef broth or water
1 teaspoon salt
0.5 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Heat olive oil in a large pot over medium-high heat. Season steak with salt, pepper, and paprika.
2. Sear steak in the pot for 2–3 minutes per side until browned. Remove and set aside.
3. Reduce heat to medium, add butter, and sauté garlic and red pepper flakes for 1 minute until fragrant.
4. Stir in heavy cream and simmer 2–3 minutes. Add parmesan and stir until melted.
5. Add rotini and beef broth. Stir well, cover, and cook for 10–12 minutes, stirring occasionally.
6. Return steak to the pot and stir to coat with sauce. Simmer for 2 more minutes.
7. Turn off heat. Garnish with chopped parsley and extra parmesan if desired.
8. Serve hot straight from the pot.
Notes
You can sub beef broth with water, but broth adds extra richness.
Want it extra spicy? Add cayenne or hot sauce in step 3.
