Ingredients

1 lb shrimp, peeled and deveined

1 cup orzo pasta

1.5 cups chicken broth

1 tbsp olive oil

2 tbsp butter

1.5 cups cherry tomatoes

3 cloves garlic, minced

0.5 cup parmesan cheese, grated

2 tbsp fresh parsley, chopped

1 tbsp fresh basil, chopped

0.25 tsp red pepper flakes (optional)

Salt and pepper to taste


Instructions

1. Season shrimp with salt, pepper, and red pepper flakes.

2. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear shrimp 1-2 minutes per side until pink. Remove and set aside.

3. In the same skillet, add remaining butter and sauté garlic until fragrant.

4. Add cherry tomatoes and cook until they start to burst.

5. Stir in orzo and toast for 1 minute.

6. Add chicken broth and bring to a simmer. Cook, stirring often, for 8-10 minutes or until orzo is al dente.

7. Return shrimp to the pan and mix everything.

8. Stir in parmesan cheese and chopped herbs. Season to taste.

9. Serve hot, garnished with more herbs and a lemon wedge if desired.

Notes

Use fresh herbs at the end to keep their flavor vibrant.

Don’t overcook the shrimp; they should be just pink and juicy.
