Ingredients
12 oz smoked sausage, sliced
12 oz bowtie pasta (or any short pasta)
1 small onion, diced
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
2 cups chicken broth
1 cup heavy cream
1 cup shredded cheddar or mozzarella cheese
1 tbsp olive oil
Salt & pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
- Heat a large pot over medium heat and add olive oil.
- Add sliced smoked sausage and cook for 3-4 minutes until browned.
- Stir in diced onions and cook for another 2-3 minutes until softened.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in diced tomatoes, chicken broth, and heavy cream. Stir to combine.
- Add pasta and bring the mixture to a simmer.
- Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
- Stir in shredded cheese and mix until melted and creamy.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot.
