Ingredients

1 lb cheese tortellini (fresh or refrigerated)

2 tbsp olive oil

1 lb boneless, skinless chicken breast or thighs, cubed

Salt and black pepper to taste

4 tbsp unsalted butter

6 cloves garlic, minced

1 tsp crushed red pepper flakes (adjust to taste)

1 cup chicken broth

1 cup heavy cream

1/2 cup grated parmesan cheese

1/2 tsp paprika

1/2 tsp onion powder

1 tsp Italian seasoning

Fresh parsley or basil, for garnish

Optional: a squeeze of lemon juice


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add cubed chicken, season with salt, pepper, paprika, and onion powder. Cook until browned and cooked through. Remove from pot and set aside.
  2. In the same pot, melt the butter over medium heat. Add garlic and red pepper flakes; cook until fragrant, about 1-2 minutes.
  3. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
  4. Stir in heavy cream and Italian seasoning. Bring to a gentle simmer.
  5. Add tortellini and cook uncovered for 5–7 minutes until tender.
  6. Return cooked chicken to the pot. Stir in parmesan cheese and simmer for another 1–2 minutes.
