Ingredients

4 boneless skinless chicken thighs

1 tablespoon olive oil

2 tablespoons unsalted butter

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cremini mushrooms, sliced

1 cup orzo pasta

2 cups chicken broth

1 cup heavy cream

1 cup shredded Gruyere cheese

1 teaspoon fresh thyme leaves

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Pat chicken thighs dry and season with salt and pepper.

2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken on both sides until golden brown, about 5-6 minutes per side. Remove and set aside.

3. In the same skillet, add remaining butter. Saute chopped onion until soft, about 2-3 minutes.

4. Add sliced mushrooms and cook until browned. Stir in garlic and cook another minute.

5. Add orzo to the skillet and toast for 1 minute, stirring frequently.

6. Pour in chicken broth and bring to a gentle simmer. Return chicken thighs to the skillet.

7. Cover and cook on low heat for 12-14 minutes, or until orzo is tender and chicken is cooked through.

8. Stir in heavy cream and shredded Gruyere cheese. Cook for 2-3 more minutes until the sauce is thick and creamy.

9. Sprinkle fresh thyme over the dish before serving.

Notes

Let the orzo rest a few minutes off heat to thicken naturally.

For a lighter version, substitute half-and-half for heavy cream and reduce cheese slightly.
