Ingredients
1.5 pounds chicken thighs, boneless and skinless
1.5 pounds baby red or Yukon gold potatoes, cut into chunks
2 tablespoons olive oil
1.5 tablespoons Cajun seasoning
1 teaspoon garlic powder
2 cloves garlic, minced
1 teaspoon paprika
0.5 teaspoon salt
0.5 teaspoon black pepper
0.75 cup Parmesan cheese, freshly grated
2 tablespoons chopped parsley
Instructions
