Parmesan Roasted Green Beans are one of my favorite easy side dish recipes when I want something fast, flavorful, and reliable. Fresh green beans roast until tender with lightly crisp edges, then get coated in savory garlic, olive oil, and golden Parmesan for a simple vegetable side that fits weeknight dinners, holiday meals, and healthy snack ideas alike. Ingredients
1 lb fresh green beans, trimmed
1 tablespoon olive oil
3 cloves garlic, minced
1/3 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon lemon juice (optional)
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper if desired.
2. Wash and dry the green beans thoroughly, then trim the ends.
3. Place the green beans in a large bowl or directly on the baking sheet.
4. Add the olive oil, minced garlic, salt, and black pepper, then toss until evenly coated.
5. Sprinkle on 1/4 cup of the Parmesan cheese and toss again.
6. Spread the green beans into a single layer on the baking sheet.
7. Roast for 15 to 20 minutes, stirring once halfway through, until tender and lightly browned.
8. Remove from the oven and immediately sprinkle with the remaining Parmesan cheese.
9. Drizzle with lemon juice if using, then serve hot.
Notes
Dry the green beans well before roasting so they blister instead of steam.
Spread the beans in a single layer so the Parmesan can crisp and the beans roast evenly.
