Ingredients
1 pound ground beef
1 cup diced carrots
1 cup diced celery
1 cup diced onion
3 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) red kidney beans, drained and rinsed
1 can (15 oz) cannellini beans, drained and rinsed
1 cup ditalini pasta
4 cups beef broth
2 teaspoons Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Heat olive oil in a large pot and add diced onion, carrots, and celery. Sauté until soft.
2. Stir in minced garlic and cook for 1 minute.
3. Add ground beef and cook until browned. Drain excess fat.
4. Pour in diced tomatoes with juice. Add Italian seasoning, salt, and pepper. Simmer for 5 minutes.
5. Stir in beef broth, kidney beans, and cannellini beans. Bring to a boil, then reduce heat and simmer for 20 minutes.
