Ingredients

4 large egg whites

1 cup granulated sugar

2 teaspoons cornstarch

1 teaspoon white vinegar

1 teaspoon vanilla extract

1 cup heavy cream

1 cup mixed fresh berries (strawberries, blueberries, raspberries)


Instructions

1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper. Draw an 8-inch circle as a guide and flip the paper over.

2. In a clean bowl, beat egg whites on medium speed until soft peaks form.

3. Gradually add sugar, 1 tablespoon at a time, beating until stiff, glossy peaks form.

4. Gently fold in cornstarch, vinegar, and vanilla extract.

5. Spoon meringue onto parchment, shaping into a circle and creating a well in the center.

6. Bake for 90 minutes. Turn off the oven, leave the door ajar, and cool completely.

7. Beat heavy cream until soft peaks form.

8. Spoon whipped cream into the meringue center and top with fresh berries. Serve immediately.

Notes

Let the meringue cool in the oven slowly to avoid cracks.
