Ingredients

2 cups peeled and thinly sliced Granny Smith apples

1 cup chopped pecans

1 cup brown sugar

1 cup unsalted butter, softened

2 teaspoons cinnamon

2 cups all-purpose flour

2 large eggs

1 teaspoon baking powder

0.5 teaspoon baking soda

1 cup Greek yogurt or sour cream

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.

2. Toss sliced apples with 1/4 cup brown sugar and 1 teaspoon cinnamon; set aside.

3. Mix 1/2 cup brown sugar, 1/2 cup flour, 1 teaspoon cinnamon, chopped pecans, and 1/4 cup cold butter until crumbly. Chill.

4. Cream remaining butter and brown sugar until fluffy. Add eggs one at a time. Stir in vanilla and yogurt.

5. In a separate bowl, whisk flour, baking powder, and baking soda. Add gradually to wet mixture.

6. Spread half of the batter in the prepared pan. Layer with apple mixture. Add remaining batter on top.

7. Sprinkle streusel topping evenly.

8. Bake 45–50 minutes or until a toothpick comes out clean. Cool before serving.

Notes

Make sure your butter is cold for the streusel to keep it crumbly and crisp.

Slice apples thinly to ensure they cook evenly and soften just right.
