Ingredients

0.5 cup granulated sugar
0.75 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2.25 cups all-purpose flour
0.5 teaspoon baking soda
0.5 teaspoon salt
1.5 cups semi-sweet chocolate chips
0.5 cup crushed peppermint candies
Instructions
1. In a large bowl, cream the softened butter with both sugars until light and fluffy.
2. Add the egg and vanilla extract, mixing until fully incorporated.
3. In a separate bowl, whisk together the flour, baking soda, and salt.
4. Gradually mix the dry ingredients into the wet ingredients until just combined.
5. Fold in the chocolate chips and half of the crushed peppermint.
6. Scoop dough onto a parchment-lined baking sheet.
7. Press extra chocolate chips and peppermint on top of each cookie.
8. Bake at 350°F (175°C) for 9–11 minutes, until edges are set.
9. Cool on the pan for 5 minutes before transferring to a wire rack.
Notes
For best peppermint crunch, use crushed candy canes or starlight mints—not soft mints.
Slightly underbake the cookies for ultra chewy centers—they’ll finish setting as they cool.
