Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3/4 cup dried cranberries
3/4 cup whole almonds
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
3. In another bowl, beat the eggs with vanilla and almond extracts.
4. Gradually mix wet ingredients into dry ingredients until a dough forms.
5. Fold in cranberries and almonds with a spatula or your hands.
6. Divide the dough into two equal parts and form into logs on the baking sheet. Flatten slightly.
7. Bake for 25–30 minutes until lightly golden and set. Remove and let cool 10 minutes.
8. Slice each log diagonally into 3/4-inch pieces using a serrated knife.
9. Arrange slices cut-side down and bake 10 minutes. Flip and bake another 10 minutes.
10. Let cool completely before storing or serving.
