Ingredients

0.75 lb thinly sliced ribeye steak

1 tablespoon butter

0.5 red bell pepper, sliced

0.5 green bell pepper, sliced

0.5 yellow bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

4 cups beef broth

4 oz cream cheese

1 cup shredded provolone cheese

1 teaspoon Italian seasoning

0.5 teaspoon salt

0.25 teaspoon black pepper

Instructions

1. In a large pot, melt butter over medium heat. Add onions and bell peppers. Sauté until softened and slightly caramelized, about 5–7 minutes.

2. Stir in minced garlic and cook for another minute until fragrant.

3. Add sliced ribeye steak and cook until browned but still tender, about 3–5 minutes. Season with salt, pepper, and Italian seasoning.

4. Pour in beef broth and bring to a gentle simmer. Cook for 10 minutes to let the flavors blend.

5. Lower heat and stir in cream cheese until fully melted and incorporated.

6. Add provolone cheese and stir until smooth and creamy.

7. Taste and adjust seasoning if needed. Serve hot and top with extra cheese if desired.

Notes

For an extra punch, try adding sautéed mushrooms or a splash of hot sauce.

Don’t skip the provolone — it gives the soup that authentic cheesesteak flavor!
