Ingredients

1 cup unsalted butter, softened

1 cup light brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 tsp vanilla extract

2 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 cup roasted unsalted pistachios, chopped

1 1/2 cups dark chocolate chunks or chips

Flaky sea salt for topping (optional)


Instructions

  1. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  2. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Slowly add dry mixture to the wet ingredients.
  4. Fold in chopped pistachios and chocolate chunks gently.
  5. Cover and chill the dough for at least 30 minutes (up to 24 hours).
  6. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  7. Scoop dough into balls (about 2 tbsp each) and place 2 inches apart on the baking sheet.
  8. Bake for 10–12 minutes until edges are golden and centers are just set.
  9. While warm, sprinkle with flaky sea salt. Cool 5 minutes on tray, then transfer to wire rack.
