Ingredients
8 large flour tortillas
1 1/2 cups pizza sauce
3 cups shredded mozzarella cheese
32 slices pepperoni
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/4 teaspoon red pepper flakes optional
2 tablespoons chopped fresh basil or parsley optional
Instructions
1. Preheat the oven to 400°F (200°C) or preheat your air fryer to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray the air fryer basket with cooking spray.
2. In a small bowl, whisk together the olive oil, garlic powder, and dried Italian seasoning. Set aside for brushing the burritos.
3. Warm the flour tortillas so they are soft and flexible. Stack them on a plate, cover with a damp paper towel, and microwave for 20–30 seconds or warm briefly in a dry skillet.
4. Lay one warm tortilla on a clean surface. Spread about 2 tablespoons of pizza sauce down the center, leaving a 1-inch border around the edges.
5. Sprinkle roughly 1/3 cup of shredded mozzarella over the sauce, then arrange 3–4 slices of pepperoni on top. Add a tablespoon of grated Parmesan and a pinch of red pepper flakes, if using.
6. Fold the left and right sides of the tortilla over the filling, then roll it up tightly from the bottom, burrito-style, keeping everything snug as you go. Place the burrito seam-side down on the prepared baking sheet or in the air fryer basket. Repeat with remaining tortillas and filling.
7. Brush the tops and sides of each burrito with the garlic-herb olive oil mixture. Sprinkle the remaining Parmesan evenly over the tops.
8. For oven baking, bake the burritos at 400°F (200°C) for 12–15 minutes, turning once halfway through, until the tortillas are golden and crisp and the cheese is melted.
9. For air frying, cook the burritos at 375°F (190°C) for 8–10 minutes, flipping once halfway through. Cook in batches if needed so the basket is not overcrowded.
10. Let the cooked burritos rest for 2–3 minutes, then slice in half on the diagonal. Garnish with chopped fresh basil or parsley and serve with extra warm pizza sauce for dipping.
Notes
Don’t overfill the tortillas or they’ll be hard to roll and more likely to burst; a modest layer of sauce and cheese gives you the best shape and crisp texture.
For the crispiest leftovers, reheat burritos in the oven or air fryer at 350°F (175°C) until hot instead of microwaving, which keeps the tortillas from turning rubbery.
