Ingredients
3 large potatoes
2 large leeks
2 cloves garlic
4 cups vegetable broth
2 tablespoons olive oil or butter
1 teaspoon salt

1/4 cup chopped scallions (optional for topping)
1/4 cup crispy shallots (optional for topping)
Instructions
1. Clean the leeks thoroughly and slice them thin. Peel and cube the potatoes.
