Ingredients

1 cup pumpkin puree

1 cup cottage cheese

2 large eggs

3 tablespoons maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1 teaspoon baking powder

1/4 teaspoon salt


Instructions

1. Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking dish.

2. In a blender, combine pumpkin puree, cottage cheese, eggs, maple syrup, and vanilla extract. Blend until smooth.

3. Add pumpkin pie spice, baking powder, and salt to the blender. Pulse until just combined.
