1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 cup unsalted butter (for glaze)
2 cups powdered sugar
3 tablespoons brewed espresso or strong coffee
1/2 teaspoon vanilla extract (for glaze)
Instructions
1. Beat butter and brown sugar until fluffy.
2. Add pumpkin puree, molasses, and vanilla; mix until combined.
3. In a separate bowl, whisk flour, baking soda, salt, and spices.
4. Add dry mixture to wet ingredients and mix until just combined.
5. Chill dough for 30 minutes.
6. Scoop onto parchment-lined sheet and bake at 350°F for 10–12 minutes.
7. While cooling, whisk glaze ingredients until smooth.
