Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
2 large eggs
3/4 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon almond extract
1 1/2 cups chopped or halved maraschino cherries, well drained
1/3 cup sliced almonds
1 cup powdered sugar
2 tablespoons milk
Instructions
1. Preheat the oven to 350°F and grease or line a 9×5-inch loaf pan.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, whisk together the sugar, eggs, milk, oil, vanilla extract, and almond extract until smooth.
4. Add the dry ingredients to the wet ingredients and stir just until combined.
5. Fold in the cherries and most of the sliced almonds, saving a few for the top if desired.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Sprinkle the remaining sliced almonds over the batter.
8. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool in the pan for 10 to 15 minutes, then move the loaf to a wire rack to cool completely.
10. Stir together the powdered sugar and 2 tablespoons milk to make a glaze, then drizzle over the cooled bread.
11. Let the glaze set before slicing and serving.
Notes
Drain the cherries very well and pat them dry so the batter does not get too wet.
Do not overmix the batter or the loaf can turn dense instead of soft and tender.
