Ingredients
2 red bell peppers
2 yellow bell peppers
1 zucchini
1 red onion
1 bunch asparagus
1 cup mushrooms
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme (optional)
1/2 cup goat cheese, crumbled
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Wash and chop bell peppers, zucchini, onion, and asparagus into uniform sizes.
3. Clean and halve mushrooms if large.
4. In a large bowl, toss all vegetables with olive oil, salt, pepper, garlic powder, and thyme.
5. Spread vegetables on the baking sheet in a single layer.
6. Roast for 20–25 minutes, flipping halfway through, until edges are caramelized.
7. Remove from oven and immediately sprinkle with crumbled goat cheese.
