Ingredients

For the Cupcakes:

1 1/4 cups (160g) all-purpose flour

1 tablespoon cocoa powder (unsweetened)

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (115g) unsalted butter, softened

3/4 cup (150g) granulated sugar

1 large egg

1/2 cup (120ml) buttermilk

1 tablespoon red food coloring

1/2 teaspoon vanilla extract

1/2 teaspoon white vinegar

For the Cream Cheese Frosting:

8 oz (225g) cream cheese, softened

1/4 cup (60g) unsalted butter, softened

2 cups (240g) powdered sugar, sifted

1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, beat butter and sugar until light and fluffy.
  4. Add the egg, followed by buttermilk, vanilla, vinegar, and red food coloring. Mix until just combined.
  5. Gradually mix dry ingredients into the wet ingredients until batter is smooth.
  6. Divide batter evenly into cupcake liners, filling each about 2/3 full.
  7. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  8. Let cool in pan for 5 minutes, then transfer to wire rack to cool completely.
  9. For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until fluffy.
  10. Frost cooled cupcakes and decorate as desired.
