Ingredients

3 pounds butternut squash, peeled seeded and cubed

1 head garlic

2 tablespoons olive oil

3 tablespoons unsalted butter

1/4 cup heavy cream

1/4 cup grated Parmesan cheese

1 teaspoon kosher salt

1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Spread the cubed butternut squash on the baking sheet, drizzle with olive oil, and season with salt and black pepper.

3. Slice the top off the head of garlic, drizzle it with a little olive oil, wrap it loosely in foil, and place it on the baking sheet beside the squash.

4. Roast for 30 to 40 minutes, stirring the squash once halfway through, until the squash is fork tender and the garlic is soft and golden.

5. Transfer the roasted squash to a large bowl or food processor.

6. Squeeze the roasted garlic cloves out of their skins and add them to the squash.

7. Add the butter, heavy cream, and Parmesan cheese.

8. Mash or blend until smooth and creamy.

9. Taste and adjust with more salt and pepper if needed.

10. Serve warm with extra butter or black pepper on top if desired.

Notes

Roasting the squash instead of boiling it keeps the flavor concentrated and prevents the mash from becoming watery.

For an extra silky texture, blend the finished squash mixture in a food processor for a few seconds before serving.
