Roasted Parmesan Potatoes and Broccoli

Description

Crispy roasted Parmesan potatoes and tender, flavorful broccoli make the perfect side dish for any meal. Seasoned with garlic, paprika, and fresh parsley, this easy oven-roasted recipe is packed with bold flavors and delicious textures. Great for weeknights or meal prep!


Ingredients

1.5 lbs Yukon Gold or baby potatoes, diced into bite-sized cubes

2 cups broccoli florets

3 tbsp olive oil

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp salt

½ tsp black pepper

½ tsp paprika

½ tsp red pepper flakes (optional)

2 tbsp fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the diced potatoes with 2 tbsp olive oil, garlic, salt, black pepper, paprika, and red pepper flakes.
  3. Add Parmesan cheese and mix well to coat evenly.
  4. Spread potatoes on the baking sheet in a single layer and roast for 20 minutes, stirring halfway through.
  5. After 20 minutes, push the potatoes to one side of the baking sheet. Add broccoli florets, drizzle with 1 tbsp olive oil, and toss with a little salt.
  6. Return to the oven and roast for another 15-20 minutes until the potatoes are golden and crispy, and the broccoli is tender with slightly charred edges.
  7. Remove from the oven and sprinkle with fresh parsley and extra Parmesan cheese if desired.
  8. Serve immediately and enjoy!
