Ingredients

2 ripe but firm pears

2 ounces goat cheese

1/4 cup walnuts

2 tablespoons maple syrup

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

1/2 teaspoon fresh rosemary

1/4 teaspoon kosher salt

1/8 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F and line a small baking sheet or baking dish with parchment paper.

2. Slice the pears in half lengthwise and scoop out the cores with a spoon or melon baller. Trim a tiny slice from the bottom if needed so they sit flat.

3. Arrange the pear halves cut side up on the prepared pan.

4. Brush the pears with olive oil, then sprinkle with thyme, rosemary, salt, and black pepper.

5. Roast for 20 to 25 minutes, until the pears are tender and lightly caramelized around the edges.

6. Remove the pan from the oven and add crumbled goat cheese to the center of each pear half.

7. In a small saucepan over low heat, warm the maple syrup and stir in the chopped walnuts for 1 to 2 minutes, until glossy and fragrant.

8. Spoon the warm maple walnut drizzle over the roasted pears.

9. Garnish with extra thyme if desired and serve warm.

Notes

Use pears that are ripe but still firm so they roast beautifully without falling apart.

Add the goat cheese after roasting so it softens gently and keeps its creamy texture.
