1.5 lbs baby potatoes, halved
200g (7 oz) feta cheese, cubed
4–5 garlic cloves, peeled and lightly crushed
2–3 tbsp olive oil
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
Fresh thyme or rosemary sprigs (optional)
Zest of 1 lemon (optional)
Instructions

- Wash and halve the potatoes (or quarter if large). Pat dry.
