Ingredients
1 medium spaghetti squash
1 tablespoon olive oil
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped parsley (optional)
Instructions
1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds.
2. Drizzle the cut sides with olive oil, sprinkle with salt and pepper, and place cut side down on a baking sheet. Roast for 40 minutes or until fork-tender.
3. Meanwhile, melt butter in a saucepan over medium heat. Add garlic and cook for 1 minute until fragrant.
4. Pour in the heavy cream and let it simmer for 5 minutes. Stir in Parmesan cheese until smooth. Season with salt and pepper.
5. When the squash is cool enough, use a fork to scrape the flesh into spaghetti-like strands.
6. Place the squash strands back in the shells or into a baking dish. Mix with the Alfredo sauce.
7. Sprinkle mozzarella cheese on top and return to the oven for 10–15 minutes until bubbly and golden.
