Ingredients
1.5 lbs Roma tomatoes
6 garlic cloves
1 medium yellow onion, chopped
1 cup fresh basil leaves
2 cups vegetable or chicken broth
2 tbsp olive oil
1/2 cup heavy cream (optional)
1 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat oven to 400°F (200°C). Halve tomatoes and place cut-side up on a baking sheet with unpeeled garlic. Drizzle with olive oil, salt, and pepper. Roast for 35-40 minutes.
2. In a pot, heat olive oil over medium heat. Add chopped onion and sauté until golden, about 7-10 minutes.
3. Transfer roasted tomatoes, peeled garlic, and sautéed onions into a blender. Add basil and 1.5 cups broth. Blend until smooth.
4. Return to pot, add more broth for desired consistency. Simmer for 10 minutes. Season with salt and pepper.
5. Stir in heavy cream if using. Simmer for 2-3 minutes more. Serve warm.
Notes
For freezing, omit the cream and add it during reheating.
Use San Marzano canned tomatoes when fresh ones are out of season.
