8 large eggs
1/2 cup milk (or heavy cream)
1 cup cooked sausage, sliced
1 cup fresh spinach, chopped
1/2 cup cherry tomatoes, halved
1/2 cup shredded cheese (cheddar, mozzarella, or feta)
1/4 cup chopped onion
1 tbsp olive oil
Salt and pepper, to taste

Instructions
- Preheat oven to 375°F (190°C). Whisk eggs with milk, salt, and pepper.
- In an oven-safe skillet, heat olive oil and cook onions until translucent.
- Add sausage slices; cook until browned. Stir in spinach and cook until wilted.
