1 teaspoon salt
1/2 teaspoon black pepper
12 ounces cooked sausage links, sliced into thick coins
1 cup chopped red bell pepper
1 cup chopped yellow bell pepper
1 1/2 cups shredded cheddar cheese
1/4 cup chopped green onions
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally until golden and crispy.
3. Add sliced sausage and cook until browned and heated through.
4. Stir in the bell peppers and cook for 3-4 minutes until just softened.
5. Sprinkle cheddar cheese evenly on top, reduce heat to low, and cover skillet until cheese is melted.
6. Garnish with green onions and serve hot.
Notes
Use pre-cooked sausage to speed up the cooking process.
Covering the skillet while melting cheese helps everything meld and stay warm until serving.
