Ingredients
1 tablespoon olive oil
2 medium zucchini, sliced into ¼-inch rounds
8 ounces cremini or baby bella mushrooms, sliced
2 tablespoons butter
2 cloves garlic, minced
½ teaspoon dried thyme (or 1 tsp fresh)
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Slice the zucchini and mushrooms into ¼-inch thick pieces and mince the garlic.
2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and sear undisturbed for 3–4 minutes.
