Ingredients

8 oz rotini pasta

1 lb ground beef

1 cup cherry tomatoes, halved

3/4 cup black olives, sliced

1 cup shredded cheddar cheese

1 cup corn kernels

1/4 cup red onion, finely diced

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1 packet taco seasoning

1/2 cup sour cream or Greek yogurt (optional)

1 tbsp lime juice (for dressing, optional)


Instructions

1. Boil salted water and cook rotini pasta until al dente. Drain and rinse with cold water.

2. Brown ground beef in a skillet over medium heat. Drain fat, then stir in taco seasoning with a splash of water. Let simmer until thickened.

3. Prepare vegetables: halve tomatoes, dice red onions, slice green onions, and chop cilantro.

4. In a large bowl, mix pasta, beef, tomatoes, olives, red onion, corn, and cheese.

5. (Optional) Mix sour cream and lime juice with taco seasoning for a creamy dressing. Drizzle and toss.
