Description
Sesame Spicy Tuna Rice Bowl is the kind of quick lunch or easy dinner that delivers big flavor with very little effort. Creamy tuna gets mixed with sriracha, soy sauce, and sesame oil, then piled over warm rice and finished with cucumber, green onions, nori, and sesame seeds. It is one of my favorite food ideas for busy days because it feels fresh, satisfying, and packed with takeout-style flavor while staying simple enough for a fast homemade meal.
Ingredients
2 cups cooked sushi rice
2 cans tuna, 5 ounces each, drained
3 tablespoons mayonnaise
1 tablespoon sriracha
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon rice vinegar
1 teaspoon honey
1/2 cucumber, thinly sliced
2 green onions, thinly sliced
2 nori sheets, cut into strips
1 teaspoon black sesame seeds
Instructions
1. Cook the sushi rice according to package directions and keep it warm.
2. In a medium bowl, mix the drained tuna, mayonnaise, sriracha, soy sauce, sesame oil, rice vinegar, and honey until creamy but still slightly chunky.
3. Slice the cucumber and green onions, and cut the nori into thin strips.
4. Divide the warm rice between 2 bowls.
5. Spoon the spicy tuna mixture over the rice.
6. Top with cucumber, green onions, nori, and black sesame seeds.
7. Serve immediately while the rice is warm and the toppings are crisp.
Notes
Use good warm rice for the best texture, since it makes the creamy spicy tuna feel even more comforting.
Keep the cucumber, nori, and green onions separate until serving if you want to meal prep and keep everything crisp.
