Ingredients

2 eggs

2 medium tomatoes, chopped

1 red bell pepper, chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/4 teaspoon chili flakes (optional)

1 tablespoon olive oil

2 tablespoons fresh parsley or cilantro, chopped

2 slices thick bread, toasted

Salt to taste

Black pepper to taste


Instructions

1. Heat olive oil in a skillet and sauté onions until translucent.

2. Add garlic, red bell pepper, and tomatoes. Cook until softened.

3. Stir in paprika, cumin, chili flakes, salt, and pepper. Simmer 10–15 minutes.

4. Make small wells in the sauce and crack in the eggs.

5. Cover and cook until whites are set and yolks are runny (about 5–6 minutes).

6. Toast the bread slices until golden and crisp.

7. Spoon the shakshouka mixture and an egg onto each toast.

8. Garnish with fresh herbs and a drizzle of olive oil.

Notes

Toast the bread well so it doesn’t become soggy under the sauce.

Use a lid while cooking eggs to help set the whites without overcooking the yolks.
