Ingredients

2 chicken breasts

2 cups Brussels sprouts, halved

2 cups butternut squash, cubed

3 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

Instructions

1. Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.

2. In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, olive oil, salt, and pepper.

3. Place the chicken breasts on one side of the sheet pan and brush generously with the glaze.

4. Toss the Brussels sprouts and butternut squash with a bit of olive oil, salt, and pepper, then spread them on the other half of the sheet pan.

5. Roast for 25-30 minutes, or until the chicken is cooked through and vegetables are tender and golden.

6. Let the chicken rest before slicing, then serve with veggies and extra glaze if desired.

Notes

Make sure to use a meat thermometer—chicken should reach 165°F for doneness.

You can swap butternut squash for sweet potatoes or carrots depending on what you have on hand.
