Ingredients

1 pound shrimp, peeled and deveined

3 cups broccoli florets

12 ounces pasta (fettuccine or penne)

1 tablespoon olive oil

3 tablespoons butter

3 cloves garlic, minced

1 1/2 cups heavy cream

1 cup freshly grated Parmesan cheese

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup sliced mushrooms (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Add broccoli during the last 2 minutes. Drain and set aside.

2. In a skillet, heat olive oil over medium. Add shrimp, season with salt and pepper, and sauté until pink (about 2 minutes per side). Remove and set aside.

3. In the same skillet, melt butter and add garlic. Sauté for 30 seconds until fragrant.

4. Pour in heavy cream and bring to a gentle simmer while stirring.

5. Lower the heat and stir in Parmesan until the sauce thickens. Season with more salt and pepper if needed.

6. Return pasta and broccoli to the skillet. Add shrimp and toss until well coated and heated through.

7. Serve hot with extra Parmesan and cracked pepper.

Notes

Use freshly grated Parmesan, not pre-shredded, for the best sauce consistency.

Add a squeeze of lemon juice for brightness if your sauce feels too rich.
