Description

Ingredients

1 1/2 pounds ground beef

3/4 cup breadcrumbs

2 large eggs

1/3 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

6 slices deli ham

6 slices provolone cheese

1 cup fresh baby spinach

1 cup marinara sauce


Instructions

1. In a large bowl, mix ground beef, breadcrumbs, eggs, Parmesan, Italian seasoning, garlic powder, salt, and pepper. Do not overmix.

2. Flatten the mixture into a rectangle on parchment paper.

3. Layer ham slices, followed by provolone, then spinach.

4. Roll up tightly jelly-roll style. Seal edges and ends.

5. Transfer to a loaf pan or sheet tray.

6. Bake at 375°F for 45–50 minutes until internal temp reaches 160°F.

7. In last 10 minutes, spoon marinara over top and return to oven.

8. Let rest 10 minutes, then slice and serve with extra sauce.

Notes

Be sure to roll the meatloaf tightly to prevent the filling from spilling out while baking.

For a spicier kick, try adding crushed red pepper flakes to the beef mixture or using spicy marinara.
