Ingredients

12 ounces penne pasta

2 cups cooked chicken, chopped

2 cups Alfredo sauce

1 cup heavy cream

2 tablespoons butter

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Bring a large pot of salted water to a boil and cook the penne until just shy of al dente. Drain and set aside.

3. In a saucepan over medium heat, melt the butter and cook the minced garlic for about 30 seconds until fragrant.

4. Add the Alfredo sauce, heavy cream, Italian seasoning, salt, and black pepper. Stir until smooth and warmed through.

5. Mix in 1/2 cup of the Parmesan cheese and stir until the sauce is creamy.

6. In a large bowl, combine the cooked pasta, chopped chicken, Alfredo mixture, and 1 cup of the mozzarella cheese.

7. Transfer the mixture to the prepared baking dish and spread it evenly.

8. Top with the remaining 1 cup mozzarella cheese and the remaining 1/2 cup Parmesan cheese.

9. Bake for 20 to 25 minutes, until hot and bubbly and lightly golden on top.

10. Let the casserole rest for 5 minutes, then sprinkle with chopped parsley before serving.

Notes

Add a splash of milk or cream before reheating leftovers to keep the sauce smooth and creamy.

Do not overcook the pasta at the start, because it will continue to soften while baking in the casserole.
