1/2 cup rainbow jimmies sprinkles

3 cups powdered sugar
2 tbsp heavy cream
2 tsp vanilla extract
2 tbsp rainbow sprinkles for topping
Instructions
1. Preheat the oven to 350°F and line a 12-cup muffin pan with cupcake liners.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Add half of the dry ingredients to the butter mixture, then mix in the milk, then add the remaining dry ingredients. Mix just until combined.
6. Gently fold in the rainbow sprinkles.
7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
8. Bake for 18 to 20 minutes, or until the tops spring back lightly and a toothpick inserted in the center comes out clean.
9. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
10. To make the frosting, beat the butter until creamy. Add the powdered sugar, heavy cream, and vanilla extract, then beat until fluffy and smooth.

Notes
